Today, it’s likely there’s a pile of meats, cheeses, spuds and vegetables in your fridge – all left over from Christmas Day.

Bubble and squeak and Boxing Day sandwiches are the go-tos for using them up, but there are more exciting ideas you can try to prevent food waste.

Recipe development manager at HelloFresh, Mimi Morley, says: ‘More needs to be done about people carelessly overspending on the amount of food they buy for Christmas.

‘We all need to think more before we spend and ask ourselves, is this excessive or will it actually get eaten?’

In the UK alone, almost 270,000 tonnes of food is wasted during the festive period – which is similar to two million turkeys, 74 million mince pies and five million Christmas puddings.

It’s something to think about for next year, but for now, these are some more exciting ways to put your leftovers to good use, according to Mimi.

Below are some alternative recipes ideas to try…

Add a little Spanish influence into your leftover recipes.

Mimi says: ‘Mix flour, egg, one tbsp of bread sauce and breadcrumbs into shallow bowls and use your hands to shape the stuffing into the size of a golf ball.

‘Roll in the seasoned flour, then into the beaten egg, coat well in the breadcrumbs and fry in oil for 2-3 minutes.’

Dip into your cranberry sauce – and enjoy.

Transform leftover roast potatoes into something more decadent.

Mimi says: ‘Create extravagant potato skins with melted brie leftover from the cheese board, accompanied with cranberry sauce for the ultimate Boxing Day savoury treat.’

All you have to do is layer the ingredients up and place in the oven.

‘Or step out of your traditional comfort zone this Boxing Day and encase leftover roast potatoes and turkey within filo pastry parcels,’ she adds.

‘Delicious served with tangy mango chutney and sprinkled with Indian spices.’

A healthy brunch idea.

Mimi says: ‘This could cause some controversy, but for those Brussels sprout lovers, you could try Brussels sprout pancakes with smoked salmon and poached eggs.

‘Simply stir shredded Brussels into a pancake mix and serve with smoked salmon, poached eggs, seasoning and lemon zest.’
